Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1/4 cup sugar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon apple pie spice
- 2 eggs, beaten
- 2/3 cup skim milk
- 1/8 lb. melted butter, (1/4 cup)
- 1 1/2 cups apples, peeled, chopped

Preparation
Step 1
Grease or line with muffin paper cup liners 24 x 2-inch muffin pans. Sift the flour, salt and baking powder into mixing bowl. Stir in the sugar and spices. In a small bowl beat the eggs with the milk and mix in the melted butter. Stir the liquid quickly into flour mixture. Speed is essential once liquid is added to the baking powder, so do not beat the mixture since the mixture should be lumpy. Fold in the chopped apples. Spoon the mixture into greased muffin pans so they are one-third full.
Bake in preheated oven 425~F, for 15-20 minutes or until well risen and golden brown. remove from the pans and serve hot, split and buttered.
