Spicy Crab Cakes

Ingredients
- 8 oz crab meat, drained
- 1 1/2 C fresh white breadcrumbs
- 2 spring onions, finely chopped
- 1-2 T chopped fresh dill or parsley
- 1 egg, lightly beaten
- 1/4 C mayo
- 1 T Dijon
- 1-2 T lemon juice
- salt
- 2-3 dashes hot pepper sauce
- fine dried breadcrumbs, for coating
- veg oil for frying

Preparation
Step 1
Mix all indgredients except oil and dry crumbs. Form in walnut sized balls. roll in dry crumbs. Flatten to 1/2"
Refredgerate 30 minutes or longer.
Heat 1/2" oil in heavy fry pan until hot but not smoking. Fry about 2 minutes until crisp and golden, turning once.
Serve hot or warm with sauce.
