Ingredients

  • 2 Fillets of Beef, cut into 1” pieces
  • 2 Tbs. Butter
  • 1 Shallot, minced
  • 4 Oz. fresh mushrooms, sliced
  • 1 Clove garlic, minced
  • Fresh parsley
  • 1/4 Tsp. dry mustard
  • Sherry
  • Sour Cream
  • Heavy Cream
  • Demi Glaze

Step 1

Season beef cubes with salt and freshly ground pepper. Sauté beef in 1 tbs. butter on high heat until just browned on outside, but still rare. Remove beef from skillet. Lower heat to medium and add shallot, garlic and mushrooms. Sauté until nicely browned. Splash about a ¼ cup of sherry into pan and reduce. Add a ½ cup of sour cream, stir until blended, and add dry mustard and parsley. Add ½ cup of heavy cream and bring to simmer. Add demi glaze (about 1 tsp) and stir to blend. Taste - add more demi glaze or if too strong a flavor, add a little more heavy cream. Put beef back in pan and heat through for a few minutes until beef reaches desired degree of doneness.

Serve over buttered egg noodles.
