Potato Salad

  • Dressing:
  • 8-10 Medium Potatoes
  • 1 Cup Celery, chopped
  • 1 Cup Onion, chopped
  • 8 Hard Boiled Eggs, diced
  • 4 eggs
  • 1 Cup Sugar
  • 1/2 Cup Vinegar
  • 2 Tbs. Mayonnaise
  • 2 tsp. Yellow Prepared Mustard



Step 1

Cook potatoes. When cooled, peel and dice into serving dish. Add celery, onion, and diced eggs. To prepare dressing combine eggs, sugar, and vinegar in double boiler and cook until it thickens, stirring occasionally. Add mayonnaise and mustard and mix well. While still warm, pour dressing over potatoes and serve.
