Smoked Salmon Cakes

I smoked the salmon a day ahead before making cakes - do not use canned salmon - YUCK!

Ingredients
- 2 large salmon filets (smoked about 2 cups)
- 1/2 cup chopped fresh parsley
- 2 green onions, chopped
- 1/2 teaspoon mustard powder
- 1/2 teaspoon old bay seasoning
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons garlic powder
- 2 teaspoons worcestshire sauce
- 3 tablespoons grated parmesan
- 2 tablespoons dijon mustard
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
- olive oil (for frying)

Preparation
Step 1
Preheat oven to 190 degrees. Beat eggs in a large bowl, then stir in remaining ingredients except of olive oil. Form mixture into eight patties (I used a 1/2 cup measuring cup to scoop out patties.
Heat oil in skillet over medium heat and cook patties until golden brown on both sides. Place in oven to keep warm until all the patties have been cooked.
(Served with crab cake sauce)
