Ingredients
- 1 sliced red onion
- olive oil
- 2 c. sliced mushrooms
- salt
- 1/2 c. torn parsley
- 10 oz. spinach
- juice of 1 lemon
- 1/2 c. feta
Details
Preparation
Step 1
Cook onion in olive oil until golden. Add mushrooms and cook until brown. Season with salt. Remove from heat. Add parsley, spinach, and lemon juice. Season with salt and pepper. Sprinkle with feta.
