Ingredients

  • 2 lbs. beef stew meat
  • 1 cup flour
  • dried pepper flakes, to taste
  • 1 cube of butter
  • 1 tsp. dried basil
  • 1 tsp. salt
  • 4 medium carrots cut into 1 inch chuncks
  • 4 cloves garlic, finely chopped
  • 2 med. onions, chopped fine
  • 2 can's tomatoes (16 oz. size) w/the tomatoes broken up;
  • you can also choose to use diced tomates
  • 1 package frozen corn
  • 8 small red potatoes (about 1 lb.) and cut in half or quarters
  • 2 small zucchini, sliced in chunks
  • salt to taste

Step 1

Mix together flour, salt and pepper flakes in a ziplock bag. Add the stew meat to the flour and shake to coat each piece. Melt butter in a hot skillet and brown the floured meat in this butter. When the meat is browned, place in the crockpot or dutch oven. Then add the carrots, garlic, onion and tomatoes. Cover and begin heating on high for 2 1/2 hours, stirring occasionally. Then stir in the potatoes and corn and cover again and continue heating until vegetables and meat are tender. Stir in the zucchini and cover for 10 more minutes. Serve with hot, crusty bread.
