CHINESE STYLE STEAMED FISH

Ingredients

  • 1 two level Bamboo Steamer
  • 3 Stalks of Green Onions
  • A few of pieces of pickled Ginger
  • 8 Ounce Halibut or Cod Fillets
  • 6 shrimp shelled and cleaned
  • 4 scallops

Preparation

Step 1

1. Take the green onions and julienne them into 2-3 inch strips.

2. Place a few pieces of green onion on a heat safe plate and put the fish fillet on top of the onions followed with shrimp and scallops. The onions on the bottom of the plate act as a spacer so that the fillet gets steamed more evenly.

3. Then take the pickled ginger and lay it out on top of the fish fillet.

4. Fill a pot with about an inch of water and turn the heat to high. Place a steamer rack into the pot and wait for the water to boil. When the water is boiling put the plate with the fish on it inside the top layer of the bamboo steamer.

5. Place an assortment of vegetables on the bottom tray.

6. Steam for about 10 minutes or until the fish looks opaque and flakey.

7. When the fish is done steaming, carefully bring the plate out and pour out all the juices that have collected around the fish while retaining the ginger on top of the fish.

9. Put the remaining green onions on top of the fillet.

10. Chose your favorite soy sauce mixture and lightly pour over the fish.

11. Serve over a bed of fine white rice.
