Ingredients
- 1 tsp. baking soda
- 1/4 cup warm water
- 12 Tb. butter, softened
- 1 1/3 cup white sugar
- 2 large eggs
- 3 ripe bananas, mashed (I use the blender to mash them)
- 2 cups flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp. vanilla
- 1 cup chopped walnuts or pecans

Step 1
Spray bread pans with Pam (I like to use the Pam with flour in it already). In a small bowl, combine baking soda and warm water, set aside. In a large bowl combine the butter and sugar and beat until light and fluffy. Add eggs one at a time, beating well after each one. Add the smashed bananas and continue mixing well. Mix together the flour and cocoa powder and slowly add to the banana mixture, then stir in the baking soda and water that you set aside and also add the vanilla at this time. Beat just until blended, then stir in the chopped nuts. Bake at 350 degrees for 1 hour or until toothpick comes out clean. Remove from oven and cool for 5 minutes before removing from the pan.
