Ingredients
- 1/4 cup butter or margarine, softened
- 1/2 cup sugar
- 1 cup flour
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup milk
- 2 cups pitted cherries
- 1/4 - 1/2 cup sugar (use the larger amount if the fruit is sour or tart)
- 1/4 teaspoon cinnamon
- 1-1/2 cups water
- 2 tablespoons bourbon

Preparation
Step 1
Cream butter and sugar until fluffy. Mix together flour, salt and baking powder, and add to creamed mixture alternately with milk, beating until smooth. Pour mixture into a greased, shallow two quart casserole. Spoon cherries over batter. Mix together sugar and cinnamon and sprinkle evenly over cherries. Pour water over top. Bake at 375 degrees for 45 to 50 minutes. During baking the fruit goes to the bottom and the cake comes to the top. Good served warm with ice cream or whipped cream.
