Ingredients

  • 6 Roma Tomatoes
  • 1/2 cup sundried tomatoes packed in oil, chopped
  • 3 cloves garlic
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 cup fresh basil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 French baguette
  • 2 cups shredded mozzarella cheese

Preparation

Step 1

1. Preheat oven to boiler setting

2. Combine tomatoes, sundried tomatoes, garlic, olive oil, vinegar, basil, salt & pepper. Allow mix to stand for 10 minutes.

3. Cut baguette and arrange on a baking sheet. Broil 1 - 2 minutes until slightly brown.

4. Divide tomato mixture over baguette slices. Top with mozzarella cheese.

5. Broil for 5 minutes, or until cheese has melted.
