Ingredients
- 2 large eggplants, peel slice 1/2 inch
- 2 cups yogurt,, strained
- 1 head garlic, pressed
- 1 large bunch parseley, chopped
- 1 large onion, chopped

Preparation
Step 1
Salt eggplant for 30 minutes.
Fry eggplant in deep fat oil put on paper towels, to drain.
Saute onion, throw in parsley
Mix yogurt and garlic together
Layer in (deep) dish --yogurt/eggplant/onion mixture/eggplant yogurt
