Ingredients
- 2 cups rhubarb
- 2 egg yolks
- 1/4 teaspoon salt
- 1 cup sugar
- 2 tablespoons flour
- 1 refrigerated pie crust
- 2 egg whites
- 2 tablespoons sugar
- 1/4 teaspoon baking powder

Preparation
Step 1
Line pie plate with pie crust. Wash and cut rhubarb in 1/2 inch pieces. Pour boiling water over them. Then drain and put into crust. Beat yolks of eggs and add sugar, flour, and salt. Pour this mixture over rhubarb and bake at 350 F for 45 minutes.
Meringue: Beat egg whites until stiff and add sugar and baking powder.
After baking rhubarb, cover with meringue. Brown in broiler for a minute.
