Chickpea Patties with Yogurt Dressing

This is effectively a healthy, low-fat twist on falafel. Very nice flavour, but quite dry and can be fragile.

Ingredients
- Yogurt Dressing:
- 1 400 g can chickpeas, rinsed
- 1/2 cup fresh flat-leaf parsley
- 1 clove garlic, minced
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 1 tbsp flour (wholemeal if desired)
- cooking spray
- 1/2 cup non-fat yogurt (Greek if available)
- 3 tbsp fresh lemon juice
- salt and pepper

Preparation
Step 1
In a food processor, pulse chickpeas, garlic, parsley and spices until coarsely chopped and the mixture comes together when gently squeezed. Form into 8 small patties, approximately 1/2 inch thick, and coat lightly with the flour, tapping off excess.
Cook the patties in a non-stick skillet coated with cooking spray, turning carefully, until golden brown, 2-3 minutes per side.
In a small bowl, whisk the yogurt, lemon and salt and pepper. Serve drizzled over the patties, with a green salad.
