Ingredients

  • 45 Vanilla Wafers,
  • crushed (1 1/2 C)
  • 1/4 C Butter, melted
  • 1-8 oz Lite Cream Cheese
  • 1 Tbsp. Splenda
  • 3 1/4 C Skim Milk,
  • Divided
  • 1 Tub Cool Whip
  • 2 Pkgs Instant Vanilla
  • Pudding, SUGAR FREE
  • 1/2 C Carmel Topping,
  • SUGAR FREE, Divided
  • Smuckers makes it
  • 1 Each Red & Green
  • Apples, chopped
  • 1/4 C Peanuts,
  • chopped

Preparation

Step 1

No Bake. 9 X 13 pan.
Mix crushed wafers and butter;
press into bottom of pan.
Beat cream cheese, splenda and
1/2 C milk until blended; stir
in 1 C cool whip. Spread over crust.
Whisk pudding with remaining milk
(2 3/4 C) 2 minutes. Stir in 1/4 C
carmel topping. Spoon over cream
cheese layer, top with remaining
cool whip. Chill 8 hours or until
firm. Just before serving top with
apples, nuts and the last of the
carmel topping.

**I use whole wheat pastry flour
instead of vanilla wafers because
they always break down and get soggy**
I used the same measure.
Bake 325º 25 minutes. Cool.
I also sprayed the pan with Pam.
My husband loved it with the pastry
flour crust.
