Lemonade Cookies

Ingredients
- 1 cup butter
- 1 cup granulated sugar
- 1 tsp baking soda
- 2 eggs
- 1 (6 oz) can frozen lemonade concentrate, thawed (2/3 cup)
- 3 cups sifted all purpose flour
- Granulated or coarse sugar

Preparation
Step 1
In a medium bowl beat butter with an electric mixer on med-high speed for 30 seconds. Add the 1 cup granulated sugar and the baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and 1/2 cup of the lemonade concentrate until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour.
Drop dough by a rounded tsp 2" apart onto an ungreased cookie sheet. Bake in a 400 degree oven for 6-7 min or until edges are lightly browned
Cool on cookie sheet for 1 min. Transfer cookies to a wire rack. Brush hot cookies lightly with the remaining lemonade concentrate; sprinkle wih additional granulated sugar. Cool.
