  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 tsp poppy seeds
  • 1 tsp finely shredded lemon peel
  • 2 cups all purpose flour
  • Granulated sugar
  • Powdered sugar, optional

Step 1

In a large mixing bowl beat the butter with an electric mixer on med-high speed for 30 seconds. Add the 1 cup sugar. Beat until combined. Beat in the egg and vanilla until combined. Beat in poppy seeds, lemon peel and as much of the flour as you can with mixer. Stir in remaining flour. Cover and chill in the refrigerator for 1-2 hrs or until easy to handle.

Shape dough into 1" balls. Place about 2" apart on an ungreased cookie sheet. Using the bottom of a glass dipped in additional granulated sugar, slightly flatten balls to 1/2" thickness.

Bake cookies in a 375 degree oven for 8-10 min or until edges are firm and bottoms are lightly browned. Cool on cookie sheet for 1 min. Transfer cookies to a wire rack; cool. If desired, sift powdered sugar over cookies.
