Ingredients

  • 1 box (9ox) chocolate wafer cookies, ground
  • 1/4 cup sugar
  • 1/3 cup butter-flavored spread, like I can’t believe it’s not butter Mediterranean blend, melted
  • 3 mango-flavored tea bags, like Celestial Seasonings
  • 2 pkgs. (3oz each) orange gelatin
  • 1 pkg. (8 oz) reduced-fat cream cheese, softened
  • 1 cup reduced fat cottage cheese, at room temperature
  • 1 orange, zested and juiced
  • 1 container (8 oz) reduced-fat frozen whipped topping, thawed

Step 1

1. Heat oven to 350 degrees. In bowl, combine first 3 ingredients; press into 8” spring form pan. Bake 10 minutes; chill
2. Place tea bags in bowl; pour ¼ cup boiling water over tea bags. Steep 5 minutes. Remove and discard tea bags; cool tea completely. Set aside. In bowl, stir together orange gelatin and 1 ¼ cups boiling water 2 minutes or until dissolved. Cool 5 minutes. Transfer to blender; add cream cheese, cottage cheese and ¼ cup orange juice. Blend 1 minute or until smooth
3. Transfer cream cheese mixture to bowl; whisk in cooled tea, 1 tbs orange zest and whipped topping. Pour filling into cooled crust. Chill 4 hours or overnight.
