Hot Saucy Venison

Ingredients
- Marinade:
- 1 lb. venison round steak
- 1 large green pepper cubed
- 1 medium onion cut into 1/8" wedges
- 2 whole chilies
- 4 . Tbl oil
- 1 1/2 Tbl soy sauce
- 2 tsp sherry
- 1 Tbl cornstarch
- 1/8 tsp white pepper
- Cooking sauce:
- 1 Tbl minced ginger
- 1 Tbl minced garlic
- 1 Tbl sweet bean sauce or hoisin
- 2 Tbl soy sauce
- 2 Tbl sherry
- 1 tap vinegar
- 1 tsp sugar
- 1 tsp cornstarch

Preparation
Step 1
Cut venison across grain in thin slices about 1 1/2 long. Combine with marinade and set aside for 30 minutes
Prepare cooking sauce and set aside
Heat wok, add 1 Tbl oil and saute pepper and onions for about 2 minutes. Remove
Add 2-3 Tbl more oil and whole chilies Cook chilies until black and remove. Add the venison and stir fry until done
Add sauce and stir until thickened. Return veggies, fold together and serve
