Ingredients

  • 2 tsp vegetable oil
  • 2 small shallots, minced
  • 1/2 tsp chopped pitted dates (4 oz.)
  • 1/2 c. golden raisins
  • 2 T light brown sugar
  • 1/4 c. cider vinegar
  • pinch of cayenne pepper
  • 1 tsp. coarse salt

Preparation

Step 1

1.) In a medium saucepan, heat oil over medium-high heat. Add shallots and cook, stirring occasionally, until golden brown at edges (3 minutes). Add mustard seeds and cook, stirring until beginning to pop (1 minute).

2.) Add remaining ingredients and 1/2 c. water. Bring to a boil. Then reduce to a simmer and cook until thickened (about 6 min). Let cook to room temperature before serving.

(Refrigerate up to 3 weeks)
