Holiday Pork Loin

Ingredients
- 1 cup apple cider or apple juice
- 2 lb boneless pork loin
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 Granny Smith apples, cored, peeled, and sliced
- 1 butternut squash, peeled and cubed
- 12 oz pkg cranberries
- 2-3 Tbs brown sugar packed
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp dried sage

Preparation
Step 1
Pour Apple cider or juice into skillet over medium-high heat.
When liquid is hot add pork loin and sear on all sides.
Sprinkle with salt and pepper and move to slow cooker.
Drizzle skillet drippings over pork.
Combine apples, squash, cranberries and sprinkle with remaining ingredients. Stir to combine and place around pork in slow cooker.
Cover and cook on low for 5-6 hours.
Remove pork and let stand for 10-15 mins.
Slice into 1/2 inch slices.
Top with Apple mixture and serve.
