Ingredients

    g / 14 oz extra lean minced beef

    red pepper, deseeded and chopped

  • 1

    courgette, chopped

  • 1

    onion, peeled and chopped

    garlic cloves, minced

    g can chopped tomatoes with herbs

    g / 14 oz passata with herbs and garlic

    tsp dried mixed herbs

    g / 1 lb 2 oz nonfat plain yogurt

    eggs, lightly beaten

  • Pince of nutmeg

Directions

Place a frying pan over a high heat. Add beef, pepper, courgette, onion and garlic and stir-fry for 6-8 minutes. Add tomatoes, passata and dried herbs. Cook 12-15 additional minutes, stirring often. Meanwhile, mix yogurt, eggs and nutmeg until smooth. Season well. Preheat oven to 200 degrees C. Spray a medium lasagne dish with cooking spray. Spoon half the mince mixture into dish, top with noodles and yogurt. Repeat, finishing with yogurt. Bake in the oven for 25-30 minutes or until top is golden. Remove from the oven and serve immediately with a mixed salad or side vegetable.
