Baked Penne Pasta

  • Tomato Sauce:
  • 2 cups penne pasta
  • 1 1/2 cups grated vegan cheddar cheese
  • 1 cup grated vegan Parmesan cheese
  • 4 tbsp whole-wheat bread crumbs
  • 1 tbsp chopped basil
  • 1 tbsp vegan margarine
  • 1 tbsp olive oil
  • 1 shallot, finely chopped
  • 2 garlic cloves, crushed
  • 1 can stewed Italian tomatoes
  • 1 tbsp chopped basil
  • sea salt and pepper



Step 1

1. To make the tomato sauce, heat the oil in a saucepan and saute the shallots and garlic for 1 minute. Add the tomatoes and basil, and sea salt and pepper to taste, and cook over a medium heat, stirring, for 10 minutes.

2. Meanwhile, cook the penne pasta in a pan of boiling water for 8 minutes, or until tender. Drain. Add to sauce

3. Mix both the cheeses together.

4. Grease a deep, ovenproof dish. Spoon a third of the tomato sauce into the base of the dish, top with a third of the cheeses. Repeat the layers twice.

5. Combine the bread crumbs and basil and sprinkle over the top. Dot with the vegan margarine and cook in a preheated oven at 375 degrees for 25 minutes, or until the dish is golden brown and bubbling. Serve at once
