Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup apple, thinly sliced
  • 2 tablespoons pine nuts
  • 1 tablespoon raisins
  • 2 avocadoes sliced
  • 8 cups mixed salad greens
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon sugar
  • 1 teaspoon dillweed

Preparation

Step 1

1. Heat the 1 tablespoon olive oil in a skillet. Saute chicken for 1-2 minutes until no longer pink.

2. Toss red onion, apples, pine nuts and raisins. Mix well. Add chicken and avocado slices.

3. In small bowl, whisk together mustard, oil, vinegar, sugar and dillweed. Toss with greens.

4. Plate greens and top with chicken avocado mixture.
