Hot German potato salad

  • 8 boiling potatoes 2.5 lb
  • 5 slices bacon
  • 1/2 C water
  • 1/2 C vinegar
  • 2 t salt
  • 3/4 t sugar
  • 1 onion thinly sliced
  • 2 t chopped parsley



Step 1

Scrub potatoes but do not pare, cook until just tender in boiling salted water. Meanwhile, pan broil bacon until done, remove from fat and crumble. To fat remaining in pan add the flour and blend well; then gradually stir in the water and vinegar. Cook over direct heat stirring constantly until mixture boils and thickens. Add salt, sugar and onion. Peel and dice the hot potatoes and add bacon to them and pour on the hot dressing. Mix lightly add parsley and serve.
