  • 1 1/4 oz pkg knox gelatine
  • 1/4 c cold water
  • 2/3 c lemon juice
  • 1 1/2 c granulated sugar, divided
  • 6 eggs, separated
  • 1 loaf size angel food cake
  • whipped cream

Preparation

Step 1

Dissolve gelatin in water. In double boiler combine lemon juice, 3/4 c sugar, and egg yolks. Cook mixture until thickened, then add gelatin. Stiffly beat egg whites, gradually adding remaining 3/4 c sugar. Fold into lemon mixture. Break angel food cake in pieces and combine with lemon mixture. Put in tube or 9x13 pan. Refrigerate and serve wtih whipped cream.
