Ingredients
- 2 lbs beef short ribs
- 5 cups water
- 1 large onion, sliced
- 2 cups carrots, sliced
- 3/4 cup green pepper, sliced
- 2/3 cup quick cooking barley
- 2 tb cooking oil
- 1 - 19 oz can tomatoes
- 1 tb salt
- 1 cup celery, sliced
- 1/4 cup parsley, snipped

Preparation
Step 1
1) In a large saucepan, brown beef ribs in hot oil. Add carrot, celery, green pepper, barley and parsley. Simmer covered, 45 minutes more. Remove from heat. Cut meat from short ribs discarding bones and fat. Skin excess fat from soup. Return meat to soup. Heat through.
