when you roast garlic you concentrate the flavors and adds a carmalized note that enhances the garlics natural sweetness. Take two whole heads garlic and remove any loose papery skin from the heads of garlic but leave them intact and the cloves covered. Slice ½ inch off the top of each head to expose the top. Put the garlic heads in the center of large piece of aluminum foil and drizzle with two tsp EVOO. Gather foil around the garlic in a pouch and put the pouch in a small baking dish (in case the oil leaks). Roast in a preheated 350 degree oven until completely soft and golden -brown, about 70-80 minutes. Let cool briefly and then push out from skin. I can store this in an air tight container in refridgerator for up to a week. I can use it to stir into mashed potatoes or other vegetables, spread on sandwhiches, mix with cream cheese for a spread on crackers, spread on toasted baguette and make croutons, whisk into a vinaigrette.
