Honey Beef and Carrot Stir-Fry

Ingredients

  • 1/3 cup honey
  • 1/4 cup sodium-reduced soy sauce
  • 2 tbsp unseasoned rice or apple cider vinegar
  • 2 tbsp cornstarch
  • 1/4 crushed red pepper flakes
  • 1 lb boneless beef sirloin grilling steak
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 2 tbsp minced fresh ginger root
  • 4 carrots, cut into 1/4 inch thin strips
  • 2 green onions, sliced

Preparation

Step 1

In liquid measuring cup, stir together honey, soy sauce, vinegar, 4 tsp of the cornstarch and red pepper flakes. Set aside.

Cut beef across the grain into thin strips. Toss with remaining 2 tsp cornstarch. In large nonstick skillet, heat half of the oil over high heat; stir-fry beef until browned but still pink in the centre, about 3 minutes. Transfer to bowl.

Add remaining oil to skillet; stir-fry garlic and ginger for 1 minutes. Add carrots; stir-fry for 2 minutes. Add 1/2 cup water. Cover and cook for 3 minutes. Pour in honey mixture; stir-fry until thickened, 1 to 2 minutes. Stir in beef and any juices; stir-fry for 1 minute or until heated through. Stir in green onions. Serve over noodles.
