CHIVE CRUSTED PORK CHOPS WITH BLUE CHEESE

Step 1
dredge pork chops in flour, then egg mixture, then a mixture of 1 pkg fresh chopped chives and 1 ½ c panko Japanese style breadcrumbs. Then cook in medium high heat non stick pan with 2 tbsp butter and 1 tbsp olive oil. When done keep hot (I put them in oven on pan) and take pan and wipe clean and cook 4 strips bacon, diced, cook until crisp. Drain bacon and keep only 1 tbsp bacon grease and add 2 tbsp butter and cook 2 tbsp finely chopped shallots. Then add 3 tbsp flour to make a rue, then add 2 c chicken broth and 1 ½ tbsp Dijon mustard. Cook and add bacon. Spoon sauce over pork and add some blue cheese crumbles. We tried on 07/07/08 and it was very good. The pork needed to cook in oven a little while. Jackie recommended not adding bacon. If I add bacon in the future make sure it is very crisp. The sauce is good but pretty heavy. I forgot to add Blue Cheese so do that in the future.
