White Bean Chicken Chili
- 1 pound Great Northern Beans, soaked
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cans (4 oz each) green chilies
- 2 tsp ground cumin
- 1 tsp dried orgeano
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 2 pounds boneless skinless chicken breats
- 1 can (14.5 oz) reduced sodim chicken broth
- 1 cup water
Put beans in medium pan and cover with water. Bring to a boil, reduce heat and allow to simmer 20 minutes. Drain and discard water. Cut chicken into 1 inch pieces and brown if desired, Put all ingredients into stonewear. Stir to mix thoroughly. Cover and cook on LOW 10 hours or HIGH 6 hours.
OR YOU CAN SOAK THE BEANS OVERNIGHT.
