Ingredients

  • 3 cups chopped tomatoes
  • 1 cup chopped red onion
  • 1 cup chopped yellow pepper
  • 1/3 cup chopped seeded jalapeño
  • 1 tablespoon chopped garlic
  • 1 1/2 cups chopped peeled peaches
  • 1 cup chopped mango
  • 1 tablespoon lime juice
  • 1 teaspoon chopped fresh cilantro

Preparation

Step 1

In a large pot over medium heat combine the vegetables. Cook for 10 minutes. Add peaches and mango and cook for additional 5 minutes. Remove from heat, add lime juice and cilantro. Stir.

Pack into hot jars leaving 1/4-inch headspace. Adjust 2-piece caps. Process 10 minutes in boiling water canner.

This recipe yields about 5 half pints.
