Banana Nut Bread

Ingredients
- 6 small bananas, mashed
- 2/3 cup oil or melted butter
- 1 cup sugar
- 4 eggs
- 2 cups all-purpose flour
- 1 cup spelt or other flour
- 1/2 cup ground flax seeds
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chopped walnuts

Preparation
Step 1
1. Heat oven to 350 degrees. Grease bottom and sides of 2(8 1/2 x 4")loaf pans.
2. Cream together the bananas, oil, sugar, and eggs.
3. Mix together dry ingredients, except nuts. Add all at once to creamed mixture. Mix just until blended.
4. Stir in nuts. Pour into prepared pans. Bake at 350 degrees for about 50 minutes. Remove from oven and let cool for 10 minutes in pans. Then invert and place loaves on wire rack to cool.
