Grilled Shrimp Tacos with a Zesty Cream Sauce

Ingredients

  • 16 large shrimp (about 30 to a pound), shelled and deveined
  • 1/4 cup olive oil
  • 1 Tbsp chili powder
  • 5 cloves garlic, minced
  • 1 Tbsp lime juice
  • 1/2 tsp fresh cilantro, chopped fine
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Taco-sized flour tortillas
  • 1 cup shredded lettuce
  • Wooden skewers soaked in water
  • Zesty Cream Sauce
  • Lemon or lime wedges and avocado slices for garnish
  • Zesty Cream Sauce
  • 1/4 cp mayo
  • 1/2 cup sour cream
  • 1 to 2 tsp spicy bbq sauce
  • 2 Tbsp plus 1 tsp lemon or lime juice
  • 1/4 tsp Worcestershire sauce
  • 1/4 tsp cayenne
  • Salt and pepper to taste
  • Mix together and refrigerate until ready to serve.

Preparation

Step 1

Soak skewers in water for about 20 minutes so they won’t burn on the grill or in the pan. (I didn’t use these).
Prepare Zesty Cream Sauce and refrigerate.
Prepare marinade for shrimp.
In a bowl, whisk together olive oil, chili powder, garlic, lime juice, cilantro, salt and pepper.
Add shrimp, stirring to coat. Marinate shrimp for 30 minutes to an hour.
When ready to grill, discard marinade and skewer the shrimp, for shrimp per skewer. Heat grill or skillet. Place shrimp on lightly oiled grill
or in skillet. Cook until deep golden brown on each side (about 1 ½ minutes per side). Remove the shrimp from the skewers. Slather Zesty
Cream Sauce on the inside of the tortilla. Add shredded lettuce and four shrimp. Drizzle more sauce over the top. Serve with lemon wedge and avocado
Slices. Makes 4 tacos.
