⅓-cup margarine. Dipping Sauce:
- cup sugar or Splenda. ½-cup low fat vanilla
½-cup packed light brown sugar. 2-TBS. no sugar applesauce
½-cup water. Dash of ground cinnamon
Mix well & refrigerate
Spoon fruit down center of each tortilla, sprinkle with cinnamon. Roll up each one, and place seam side down, in a lightly greased 2-qt. baking dish. Bring butter & next 3 ingredients to a boil in a saucepan, reduce heat & simmer,stirring constantly, for 3- minutes. Pour over enchiladas , let stand for 30- minutes. Bake at 350 degrees for 20- minutes.
