Ingredients

  • Apple base:
  • 1/3 cup Packed brown sugar
  • 2 Tbsp Unsweetened applesauce
  • 1 tsp ground cinnamon
  • 4 cups sliced apples
  • Coffee cake:
  • 2 cups all-purpose flour
  • 2 tsp Baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 c Plain yogurt

Preparation

Step 1

1.In a bowl combine brown sugar, applesauce and cinnamon. Spread over a 9" lightly greased spring-form pan. Arrange apple slices in the applesauce mixture.
2. In a Large bowl, stir together flour, Baking Powder, Baking Soda, cinnamon and salt; set aside.
3. In a small bowl, combine yogurt and applesauce, set aside.
4. In a separate bowl, using electric mixer, cream butter and sugar until lighter in color. Add eggs one at a time mixing well, then add vanilla. Gently stir in dry ingredients alternately with yogurt mixture starting with Dry first,3 times adding flour and 2 times adding Yogurt. Spoon over apples in pan.
5. Bake in a pre-heated oven 350F for 55-65 mins. Cool for 5 minutes then invert on a flat plate.
6. Serve with Ice-cream, whipped cream or your choice.
