Ingredients

  • 2 large baking potatoes
  • 2 tablespoons butter or margarine
  • 2 tablespoons chopped onion
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • dash black pepper
  • 1 cup milk
  • 4 oz. (1 cup) shredded cheddar cheese
  • 1 tablespoon butter or margarine,
  • melted
  • 1/4 cup dry bread crumbs

Boil potatoes with peel on until tender. Drain and set aside until cool enough to peel.
In medium saucepan, melt butter. Add onion and cook until limp. Add flour and seasoning, stirring until well combined and bubbly. Add milk all at once, whisking until smooth. Cook, stirring constantly until thickened and bubbly. Remove from heat and stir in cheddar cheese, a little at a time, until melted and smooth. Stir in parmesan cheese.

Peel potatoes, slice and fold into cheese sauce. Transfer to shallow baking dish. Combine melted butter and bread crumbs and sprinkle over top of potatoes. Bake at 375 degrees 20-25 minutes or until heated through and bubbly.
