Shrimp Fried Rice

Any leftover meat or vegetable can be substituted. Great dish to use up leftovers in refrigerator.
Also a great recipe to use up leftover chinese takeout rice!

Ingredients
- 1 cup cooked ham, chopped
- 1 cup cooked shrimp, chopped
- 1 green pepper, chopped
- 1/2 cup onion, chopped
- 6 beaten eggs
- 2 tsp. salt (divided)
- 1 Tbs. beer or white wine
- 6 Tbs. peanut oil, divided
- 9 cups cooked rice
- 1 tsp. dark sesame oil

Preparation
Step 1
Heat 3 Tbs. oil in wok until smoking. Scramble eggs. Add 1 tsp. salt. Remove eggs to bowl. Wipe wok clean.
Heat 3 Tbs. oil in wok until smoking. Add onions and peppers and stir-fry until crisp tender. Add eggs, ham, shrimp, beer/wine, 1 tsp. salt and cooked rice. Lower heat and cover wok and continue cooking over medium heat for 15 minutes, stirring frequently. Drizzle with sesame oil and mix well.
Serve immediately.
