Nutty Chinese Green Beans

I love green beans! They are wonderful raw as a snack, steamed or fancied up like this peanut buttery dish.
Green beans are a bit of a little power house as far as stringy little green veggies are concerned. They are low in fat, high in potassium, low net carbs and a decent amount of protein.
Beans are readily available in all grocery stores and very easy to grow. I am sure we all remember growing beans in grade school as a year end project. They grow easily and very quickly in what seems like the most unlikely places, a styrofoam cup.
If you have a whole crowd of people this recipe can be easily doubled and makes a lovely addition to a potluck table.
There are 5.3g net carbs, 4.8g protein and 3 Weight Watchers points per serving.
Ingredients
- 14 oz green beans whole , fresh
- 8 green onions chopped
- 2 cloves garlic minced
- 1/2 tsp ginger ground
- 1 tsp Splenda
- 1 tbsp soy sauce
- 1 tbsp peanut butter natural
- 1/8 tsp sesame oil
- 1/4 cup peanuts chopped
- salt to taste
