Barbecue Chicken Stuffed Potatoes

  • 4 (6-Ounce)baking potatoes, scrubbed
  • 1 1/3 cup Shredded Cooked Chicken Breast
  • 1/3 cup barbecue sauce
  • 1/2 cup reduced-fat sour cream
  • 2 ounces reduced-fat shredded extra sharp cheddar cheese (about 1/2 cup)

Preparation

Step 1

1. Pierce potatoes with a fork; arrange in a circle on a paper towel in a microwave oven. Microwave at HIGH 10 minutes or until done, rearranging potatoes after 5 minutes.
2. Combine cooked chicken and barbecue sauce in a microwave-safe bowl. Cover with plastic wrap (do not allow the wrap to touch the food. VENT. Microwave at HIGH 2 minutes or until thoroughly heated, stirring after 1 minute.
3. Cut potatoes length-wise, cutting to but not through, other side. Spoon 2 tablespoons sour cram into center of each potato; fluff with a fork. Top each potato with 1/3 cup chicken mixture and 2 tablespoons cheese.

Feel free to top these poratoes with chopped green onions or crumbled cooked bacon. Chives would work too.
