Scallops with Quinoa

Ingredients

  • 3/4 cup quinoa, rinsed
  • salt
  • 1 orange
  • 2 tbsp sugar
  • 1 tbsp vinegar
  • 2 tbsp butter, cut into pieces
  • 1 1/4 lb sea scallops
  • pepper
  • 1 tsp olive oil
  • 1 tbsp parsley or chives, chopped

Preparation

Step 1

Combine quinoa, 2 cups water and 1/2 tsp salt in a pot and bring to a boil. Reduce heat to low, and simmer, uncovered until water is absorbed, 12-14 minutes.
Grate 1 tsp orange zest, and juice the orange. Sprinkle the sugar in a skillet and cook over medium until dark, 5 minutes. Remove from heat, whisk in vinegar, orange juice and zest. Return to medium heat, boil until thick, 8 minutes. Remove from heat and whisk in butter, keep warm.
Season scallops with salt and pepper. Heat oil in large skillet over medium, add scallops and sear until golden, 4-5 minutes. Flip and cook other side, 2-3 minutes. Fluff quinoa with fork, sprinkle with parsley. Plate with scallops and drizzle with citrus sauce.
