Ingredients
- Serves 4
- 1 pound ground turkey
- 2 egg whites
- 1 small yellow onion, chopped (about 1/2 cup)
- 1/4 cup Dijon-style mustard
- 3 tablespoons chopped fresh tarragon or 2 teaspoon dried tarragon
- 3 tablespoons bread crumbs
- 1/4 teaspoon black pepper
- 4 whole-wheat hamburger buns
- 4 lettuce leaves
- 1 medium tomato, thinly sliced

Step 1
1. Heat a charcoal grill until coals form white ash, or preheat a broiler or gas grill to medium.
2. In a large bowl, combine turkey , egg whites, onion, mustard, tarragon, bread crumbs, and pepper. Mix well. Shape turkey mixture into 4 even patties.
3. Grill or broil burgers 4 inches from the heat, turning once, until browned and cooked through, about 15 minutes. Transfer turkey burgers to a plate.
4. Split the hamburger buns and place them on serving plates. Place hamburger on bottom half of each bun; top each burger with lettuce and tomato. Place tops over burgers. Serve immediately.
