Beef and Vegetable Fried Rice

Ingredients
- 1 lb lean ground beef
- 2 garlic cloves, crushed
- 1 tsp grated fresh ginger OR 1/4 tsp ground ginger
- 2 T water
- 1 red bell pepper cut into 1/2 in pieces
- 1 pkg (6oz) frozen pea pods
- 3 C cold cooked rice
- 3 T soy sauce
- 2 tsp dark sesame oil
- 1/4 C thinly sliced green onions

Preparation
Step 1
- Brown ground beef, garlic, ginger over medium heat until beef no longer pink; remove with slotted spoon and pour off drippings
- In same skillet, heat water over med heat until hot; add bell pepper and pea pods; cook 3 min until pepper is crisp-tender, stirring occasionally; add rice, soy sauce and sesame oil; return beef to skillet; heat through about 5 in; stir in green onions before serving
