Butter Dijon Parmesan Crusted Oven Fried Chicken Thighs

Ingredients

  • 6-8 boneless chicken thighs cut into bite-size pieces
  • 4 tbs melted butter
  • 1/3 cup dijon mustard
  • 1 1/2 cups Panko crumbs
  • 1/2 cup grated parmesan cheese
  • salt & pepper to taste

Preparation

Step 1

Preheat oven to 400 deg. (convention oven feature if available)
Line a baking sheet with aluminum foil & spray heavily with non-stick spray.
Rinse and pat dry chicken thighs , cut into bite-size pieces and set aside.
Mix together melted butter and dijon in a medium bowl. combine Panko, parmesan, salt, and pepper in a bowl.
Add chicken pieces to butter/dijon mixture and gently toss to be sure each piece is coated. Toss small amounts of chicken in the Panko crumb mixture and place on prepared baking sheet.
Bake about 25-30 minutes until coating is crispy and brown and chicken cooked through.
