Old Fashioned Potato Salad

Mayonnaise mixture can be doubled depending on the amount of potatoes and hard boiled eggs you use.

Ingredients
- 1 cup mayonnaise (Hellman's Light)
- 2 Tablespoon cider vinegar
- 1 1/2 teaspoon salt
- 2 teaspoons prepared mustard (Dijon)
- 1/2 teaspoon celery seed
- dash of pepper
- 4 hard cooked eggs, chopped
- 4 cups diced cooked potatoes (still warm)
- 1 1/2 cups sliced celery
- 1/2 cup sliced green onion
- 2 Tablespoons chopped fresh parsley

Step 1
Early in the day, in a large bowl, stir mayonnaise and next five ingredients. Add the remaining ingredients, and mix well. Cover and let sit in refrigerator.
