Aunt Sally's Apple Cake

Ingredients
- DOUGH
- 3 c. flour
- 3 eggs
- 3 T. baking powder
- Vanilla
- 2 sticks butter
- 2 c. sugar
- FILLING
- 8-10 great baking apples
- Cinnamon
- Sugar to taste
- JELLY ROLL PAN
- PARCHMENT PAPER

Step 1
Beat butter and sugar together until light. Add eggs, one at a time, followed by vanilla. Add baking powder and gradually flour. Turn out onto wax paper and knead a bit until smooth.
Divide in half. Roll each half between 2 sheets of wax paper cut to the size of the jelly roll pan. Put on on the bottom of the pan, patting it so that it overhangs the pan edge.
Peel, core and finely grate apples. Combine with a little cinnamon and sugar to taste.
Fill the jelly roll pan that has been lined with dough with apple filling and then put the top piece of dough on.
Crimp edges, sprinkle with a little sugar and bake at 350 until done.
