Smashed Barbecue Chickpea Rollups

Kids will love the saucy barbecue flavor in these smashed chickpea tortilla rollups. They’re super easy to make, not to mention highly portable with a little bit of veggie goodness in every bite.
Ingredients
- 1/4 cup barbecue sauce
- 1 tablespoon Greek yogurt (or sour cream)
- 1 tablespoon minced cilantro
- 1 (15-ounce) can chickpeas, drained and rinsed
- Lettuce leaves
- 1 medium green pepper, thinly sliced into strips
- 6 whole-wheat tortillas (taco size)

Preparation
Step 1
In a bowl, mash chickpeas with a fork, leaving some of them whole for texture. Add barbecue sauce, yogurt and cilantro to the chickpeas and stir to combine. Spread 3 tablespoons of the barbecue chickpeas onto the left third of each tortilla, then add a few lettuce leaves and four strips of green pepper. Roll up tightly and slice into four equal pieces. (You will have extra little parts from each end that you can nibble on.) Serve with extra barbecue sauce for dipping.
Tip: Shredded chicken would be a great alternative to the chickpeas.
