APPLE PECAN SALAD

This only takes about ten minutes to prepare. Pairs well with pork. I never understood the "pork chops and apple sauce" line from the Brady Bunch until I started cooking; yes, I'm that old.

Ingredients
- 8 cups mixed greens (pre-washed)
- 1 fuji apple, cut in half and sliced
- thinly
- 14 pecan halves
- 1 Tbs olive oil
- 1 Tbs granulated sugar
- 2 Scallions,chopped (white and green
- parts)
- 1/2 cup grated cheddar or parmesan
- cheese

Preparation
Step 1
In a small bowl, combine olive oil and sugar and stir. Add pecans and coat with mixture. Heat small skillet and add pecans. Toast pecans, shaking skillet several times until pecans are browned, but not burned (this requires constant watching).
In large salad bowl, add lettuce, apples, onion and pecans. Mix and top with cheese.
Serve with a raspberry or balsamic vinagrette.
