Caramelized Sweet Potatoes

Ingredients

  • 3 tbsp olive oil
  • 2 lbs sweet potatoes, peeled and cut 1/4 inch thick
  • 2.5 tbsp minced garlic
  • 3/4 cup white wine
  • 1.5 cups chicken stock
  • 2 tbsp brown sugar
  • 1 tsp salt

Preparation

Step 1

Heat oil in large skillet over medium. Add sweet potatoes, cook while turning, 3 minutes. Add garlic, cook 1 minute. Add wine and stock, simmer, stirring often, until liquid is evaporated, 20 minutes. Add brown sugar and salt, turning potatoes to brown both sides, cook 20 minutes. Transfer to a plate and let cool before using on focaccia.
