Ingredients

  • Topping:
  • 1 1/2 c. brown sugar
  • 1/2 c. shortening
  • 1 c. buttermilk
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp soda
  • 1/2 tsp salt
  • 2 c. flour
  • 1 1/2 c raw chopped Rhubarb
  • 1/4 c. sugar
  • 1 tsp cinnamon

Preparation

Step 1

Cream brown sugar and shortening. Add egg and beat well. Stir in buttermilk, vanilla, soda and salt. Beat well. Add flour and beat well. Stir in Rhubarb. Pour into a greased 9 X 13 inch pan. Sprinkle topping over top. Bake @ 375 degrees for 30-35 min. Test with a toothpick inserted in center after 30 min. Toothpick should be dry.
